vegan green smoothie

Happy New Year! Whether you are eating differently because of a New Year’s resolution or just want to add extra greens into your diet, I’m hoping this recipe will fit nicely into your smoothie repertoire. I used to think that vegetable based smoothies were boring and reminiscent of grass, but I couldn’t have been more wrong. As long as you have some fresh veggies, a little bit of ginger, and lime juice, you could practically adjust this recipe for whatever you have in your fridge. It’s so refreshing, so healthful, and has an abundance of electrolytes and vitamins to nourish your body or give it a much needed post-workout boost.

VEGAN GREEN SMOOTHIE
makes one 16oz smoothie

1 ounce (1 moderately packed cup) fresh spinach
1-2 stalks celery
1/2 teaspoon fresh ginger, grated
2 tablespoons hemp seeds
1 ripe banana*
1/2 cup cold water
2 tablespoons lime juice
handful of ice cubes
optional: the addition of avocado or yogurt (or both) would add healthy fats and protein if you are looking for meal replacement options

In a blender or food processor, blend all ingredients together until smooth. Best enjoyed immediately (though I have made extra and left it in the fridge overnight for breakfast the next morning).

*you could substitute a frozen banana, just use a couple less ice cubes

Note: While all the ingredients are Whole30 approved, many Whole30 participants choose to avoid smoothies and/or bananas

  1. I absolutely love adding spinach into my smoothies. You can’t tell it’s there and it gives off LOADS of vitamins. I’ll have this try this recipe out 🙂 Thanks for sharing!!

    1. Hi Angela! You could substitute half an avocado, some yogurt (either dairy or non-dairy), or an alternative milk (almond, coconut, or hemp)… though the milk might make the smoothie more like a juice and less like a thick smoothie. I know people substitute applesauce for bananas in baking but I’m not sure how that would taste in this recipe!
