In order to behave like a considerate remotely decent human I need to start the day with some food and caffeine. Pronto. This is why I love this smoothie so much. A little bit of protein, caffeine, and a hint of tropical goes a long way to transform me from hangry to happy. At the very least it will help get me out of the door at 6am and on my way to work.
If you are like me and want to save time in the morning (every minute of sleep counts, right?), chop your ginger and mango the night before and store in the refrigerator. This is also a great recipe to help you use up some of those overripe bananas you have been hoarding for waaaaay too long. After three years frozen is it still a banana?
MORNING ENERGIZER SMOOTHIE
Makes approximately one 20 oz smoothie
1 frozen banana*
1/2 of a large fresh mango, cut into pieces (or 1.5 cup frozen mango)
1/3 cup vanilla or plain greek yogurt
1 teaspoon ginger, minced
3 tablespoons shredded coconut
3 tablespoons almond butter
1/2 cup coconut or almond milk
1/4 cup chai concentrate
Blend all ingredients together until smooth. Best enjoyed immediately.
*If your banana and mango are not frozen, add 4-6 ice medium ice cubes at the end
