The Adeline: a celebratory champagne cocktail

On August 26th, Patrick and I welcomed (a couple weeks early) our daughter Adeline into the world! We couldn’t be happier or more sleep deprived or more confused about what day of the week it is (though I hear that today is Labor Day, and from now onward I’m going to think of it in the context of my 31 hours of labor). Patrick and I are going to celebrate Adeline being one week old with a pretty cocktail, as well as gratitude for our village of family and friends who have helped us survive these early days. Since it is nearing the end of peach season, take advantage of having fresh and ripe peaches to use, though if you are reading this in the off season, frozen (and thawed) peaches will work just fine.

THE ADELINE: A CELEBRATORY CHAMPAGNE COCKTAIL

makes 6 champagne flute cocktails

Ingredients:
6 oz peeled then diced peaches (about 2 small/medium peaches)*
6 oz diced strawberries*
2 tablespoons sugar
1 tablespoon fresh lemon juice
10 whole mint leaves
6 tablespoons fresh lime juice
1 bottle Champagne or sparkling wine
6 lime twists

Directions:
Combine peaches, strawberries, sugar, and lemon juice in a blender. Blend the fruit until smooth. Pour the blended fruit into a small saucepan and add the whole mint leaves. Bring to a gentle simmer for 8-10 minutes, until slightly reduced in size. Pour the strawberry peach compote into a bowl and place in the refrigerator. When the compote is cool, remove from fridge and pull out the 10 mint leaves.

Spoon 2.5 tablespoons of the compote into a champagne flute. Add 1 tablespoon lime juice and stir. Top the rest of the glass off with champagne and give a gentle stir. Garnish with a lime twist.

*you can use frozen and thawed fruit if fresh options are unavailable to you
